I have a confession to make. I don’t necessarily cook every day. Yes, we eat real food every day, but that doesn’t necessarily mean I cooked it fresh that exact day. For instance, the pulled ham for this particular taco is from Christmas dinner. I always get rave reviews from my family when leftover meat is used to create a taco of some sort and the reaction was great with this one, as usual. Leftover meats freeze really well and make delicious meals later.
For Christmas dinner, I made the ham here this time in a slow cooker instead of the oven. It was so large that I had to cut it into pieces to get it to fit in. I added a little water to the bottom and a splash of vinegar then slow cooked it on low for 9 hours. A pastured ham like this that isn’t overly cured will pull apart just like regular pulled pork if you slow cook it, but it tastes like ham. Bonus!
To reheat it, I placed it in an oven safe dish with a little water on the bottom and put the ham and what I saved the first time around of the gelatinous broth that was left on the bottom of the slow cooker. The ham had a really great marrow-filled bone in it when it was slow cooked, thus the awesome broth. Anyway, I put some of the broth over the meat to be reheated to keep it from drying out and to keep it nice and nutrient dense. I slowly reheated it at 200F in the oven. It took 10 minutes. Slowly reheating food is a magical thing. When things are slowly reheated, they don’t taste like leftovers.
I have another confession to make: I didn’t make the tortillas from scratch. I buy tortillas and I make tortillas. My family gobbles them all down. When I do buy them, I like the ones by Food for Life. We eat the sprouted corn tortillas. They are organic and don’t have added soy. Buyer beware though, most of their breads do have added soy. Occasionally I can also find a sprouted wheat tortilla without soy or a gluten free one. I got each of the tortillas damp with some water and warmed them directly on the oven rack for several minutes. Check to make sure they don’t get dried out, just nice and warm and pliable.
I just chopped up some things I usually always have on hand: radishes, green onions, cilantro and pineapple. I topped it with a pastured, organic sour cream.
