Yes, I would like a cheeseburger. I’d like a delicious, gooey, buttery, seasoned burger over a baked potato. Cheeseburgers really light up my life. This one contains some of my favorite things all in one dish. If you can bake a potato and make a burger, you can make some Mushroom Baked Potato Cheeseburgers. I like to use grassfed beef due to its better fatty acid ratio profile. I also know that the animals were treated humanely and they lived in fresh air and sunshine as nature intended. I personally buy mine directly from a farmer. You can find a farmer through eatwild.com.
I made enough for us to have leftovers. Feel free to cut this recipe in half.
Ingredients (Time: 1 hour 7 minutes, about 25 minutes actual hands-on time)
10 medium sized baking potatoes (I used organic)
2lbs grassfed ground beef
1/2t garlic powder (here)
1t mineral-rich salt (here)
2T coconut aminos (this is a soy sauce alternative that is slightly sweet and doesn’t taste like coconuts, here)
6oz raw cheese (I had Monterey Jack around)
3-4 green onions (I used organic)
1lb mushrooms (I had shiitake) +pinch of salt
2T cooking fat (butter, clarified butter, beef tallow, real lard from a pastured pig or expeller pressed coconut oil)
Instructions:
Wash the potatoes, pierce the skin and bake them for 1 hour at 350F. When they are in the oven, pull out your ground beef so it can reach room temperature. Cold meat makes a tough burger.
During about the last 20 minutes of the potatoes baking: Mix the raw ground beef, salt and garlic powder, coconut aminos, then cook on medium-medium high heat on each side till cooked through.
While the burgers cook, chop up 3-4 green onions.
After the burgers are cooked through (I had 10), place them on a tray with the cheese and put them into a still warm oven after you’ve removed your potatoes. With the oven off, the cheese should melt well. (About 5-7 minutes).
While your cheese is melting, on medium heat, put your cooking fat and mushrooms into the griddle and cook them through for a few minutes. Add in a pinch of salt at this time.
Butter your potatoes (I used a pastured butter where the cows are actually on pasture [like Kerrygold]), then top with the cheeseburger, mushrooms and green onions.
