Oh, eggnog. Confession time. I started making homemade (and nutrient dense!) eggnog in July….years ago. I drink it almost year-round. Right before Christmas, I lay off of the nog for awhile, so I feel the proper christmas spirit on the proper month, ahem. You could say that I keep the christmas spirit in my heart nearly all the time. Yeah, we’ll say that’s what it is.
Ingredients:
6 egg yolks (preferably from pastured hens)
1/2 t vanilla extract (like this)
1/4 c real maple syrup, if you want it less sweet, use 3T (like this)
A pinch of mineral rich salt (here, here, here)
2 1/2 t fresh grated nutmeg (here)
4 cups raw full-fat milk from pastured cows or milk of choice
1/2 cup heavy cream (preferably from pastured cows)
Instructions:
Run all the ingredients through a large capacity blender or put it in a large jar and use an immersion/stick blender like (this). Chill for 1 hour before serving. Pour the foam left over on top of each serving glass. Grate fresh nutmeg over each glass.
